The Fruit Truck Flipped and Gave Us All Limes

That title just about sums it up.

A couple of weeks ago, Hubs and I were visiting my family and grabbing some of the garden-fresh veggies that sometimes come our way when we're "down South."

Note: If you've never had a home-grown tomato or cucumber, please fix this as soon as you can. There are few things in the world that taste as good as a fresh-from-the-garden veggie :)

While we were there, my mom seemed to have an usual amount of limes around, and asked if we would PLEASE take some back to The City with us.

This is odd, because my mom isn't exactly a huge LIME fan, even though there were probably about 20 or so in her kitchen at the time.

It turns out, she had a surplus in the lime department because, the day before, a fruit truck that was driving through town sort of...lost its balance and spilled limes everywhere.

Thankfully, no one was injured so FREE LIMES FOR EVERYONE!

We also got a few jalapeƱo peppers out of the deal.



 So, naturally, we made enchiladas and guacamole for supper.







I love being from a small town in Mississippi. It's just the best.

Friday Thoughts

I've sat down at least TWICE this week to write a post or two, but to be quite honest, there's not a lot going on right now and I thought I'd spare you pointless details about the tacos I made on Tuesday night and the beautiful weather we've had lately.

Don't you love me? :)

However, it's been kind of quiet over here today, and I've found that writing keeps me HIGHLY entertained. So bear with me, because

ONE. There are some people that can go all day at work - all eight hours or so - and still leave looking just as flawless as they did when they arrived that morning. I am NOT one of those people.

Please, somebody, tell me how it's done! How on EARTH do you people keep your hair looking FANTASTIC? How do you keep ALL OF YOUR MAKEUP ON through the day? By noon mine is non- existent and my hair looks A HOT mess.


TWO. Ever since our daycation last weekend, I'm in full-blown vacay mode. Unfortunately, it's impossible to find a place to stay, um, ANYWHERE near the beach without roughly SIX MONTHS notice. I have an idea or two I'm stewing on, but it MIGHT have to wait until June.

JUNE. Patience is not my strong suit.



THREE. Today we had a baby shower at work. With what appears to be THE MOST fantastic diaper cake I've ever seen in my life.


I kind of want a centerpiece like this for my dining room table. I have a feeling that JUST might be vetoed by a certain tall man wearing a ridiculous hat.


FOUR. Speaking of baby shower, I MOST DEFINITELY bought THESE SHOES for my gift. I have no idea if the couple were registered anywhere, but as soon as I heard the words "baby girl gift" my mind IMMEDIATELY said "GLITTER."

DO YOU EVEN KNOW HOW THIS AFFECTS ME???



If I found these in adult sizes I would most certainly own them by now.



FIVE. It's been five months since our St. Jude race in Memphis, and my knee/leg issue has FINALLY healed up. So I'm celebrating tomorrow by - WHY NOT - doing a 5K, because the weather has been fantastic lately and all I want to do is RUN THE RACES.

Fingers crossed that my leg really is, in fact, healed up and there will be no hobbling like last time! :)


SIX. Every year around this time I catch myself thinking about how nice it must be to be teacher with summer break right around the corner. But THEN I remember how scary it must be to be outnumbered by small children and/or teenagers, and then crawl back into my cube to continue sending emails to people who are not, technically, children.


SEVEN. The Hannah and Kaylee Show. Gets me EVERY TIME. Watch their stuff and just TRY not to laugh.



EIGHT. I saw this yesterday and was THISCLOSE to sending it to Hubs at work. Considering the fact that we don't exactly have a dog (or any kind of pet) I'm thinking it will not fly.



A girl can dream.

And toss them into storage,
To get them out of her hair.

Her apartment has become.

“Enough!” she’ll say, “I’m done!”

The time is right, she’ll think,
To take a trip to Target.
She’ll grab her keys and scurry,
With her debit card and wallet!

And Target, oh that magical place,
Let’s all its praises sing!
For its clothing, groceries, STORAGE BINS,
And all the sparkly things!

A girl will gather what she needs,
Especially storage supplies.
She’ll go home and get to business,
To get that closet organized!

She’ll work and she’ll work,
For hours upon end.
Sorting, searching, cleaning still,
This night’s for sure a win!

But when the closet she has finished,
That purse she hasn’t found.
She cleans her bedroom, kitchen, her living room too,
And everything else around.

But once there’s nothing left to clean,
Or organize or sort,
“Oh my!” she’ll say, “It’s 1 AM!
My mission I must abort!”

So as she lies that night in bed,
She’ll think of the time she took.
A seven-hour search for just one thing!

And it all started with a checkbook.




...But I wouldn't know anything about that ;)

Hootie & the Mondays

This morning I woke up with Hootie's "Let Her Cry" in my head.

I have no idea why, because I really haven't heard this song in way too long. But for some reason, I've been HOOKED on this song all day.

Oh Hootie. You and your ridiculously soothing voice.

So what did I do?

Went straight to work at finding the Hootie & the Blowfish station on Pandora.

So LAST WEEK.

Last week was a little rough. But that's okay because on Friday, THIS GIRL came to town!!!!


My friend Stephanie from college was passing through The City with her honey, Russ, and made a pit stop to have a double date with Hubs and myself.


We had a ball. Hubs and Russ go WAY back and have been friends since high school, so it's really funny that he and Stephanie, whom I've been close to since college, have found one another.

We're all from around the same area (Stephanie is from a small town about 15 minutes from my hometown), so it was SO NICE to have a little bit of "home" with us to kick the weekend off right.

We even revisited our crazy college roots and stayed out until the grand old hour of 9 p.m. because we are PARTY. ANIMALS.


Saturday morning, we intended to run our City's St. Paddy's Day 5K. However, when we woke up and it was raining, we opted out considering Hubs and I had both been sick the entire week.

So we did the only sensible thing to do in times like these and hit the road for SHIPLEY'S.


Only the greatest donuts around. NBD.

We also stopped for fancy coffee and all that jazz from our favorite shop and took a rainy drive through the woods.



We basically did a lot of nothing this weekend, but were oddly okay with that because sometimes, especially after being sick for a week, you just need to curl up and rest while eating donuts and listening to the rain.

On a totally unrelated note, I think I'm finally close to mastering the art of Charlene's biscuits*.

From Slushtown, USA

Greetings from Slushtown, party people!

We've had a loooooooot of rain and freezing temps today, so naturally the weather is quite...yucky. Half of our city shut down early tonight due to icy roads, so we've been taking it easy and enjoying an evening on the couch with red beans and rice.

Rainy day relaxing is a wonderful thing indeed :)

We kicked off this past weekend with homemade pizza. I've always been afraid to made any kind of bread from scratch, especially since it typically involves yeast (which, by the way, the thought of which has always scared me) - but since Hubs had to work late and I had some time to kill, I set to work in the kitchen with HowSweetEats's recipe in hand.

I'm so glad I did. The recipe was super practical - we had everything on hand already! And the finished product was CRAZY GOOD. Like --- I'm pretty sure we MIIIIIIGHT be making our own crust from here on out.






PLEASE tell me that YOU WILL TRY THIS TOO.

You WILL be impressed.

Saturday was filled with work fun! Our organization's annual charity food competition was happening, and awhile back my boss asked me to step in for graphic design purposes. It took A LOT of learning and a team of about 25 people, but we were all mighty proud of the way our booth and theme turned out.



Plus, who doesn't love a Ninja Turtle-themed food truck that's shoving mini-pizzas in your face?



It was an indoor event, and there were about 15 other teams competing.

...which meant there were OVER 15 dishes to sample.

OVER FIFTEEN.

One of which was RIBS. And another had SWEET POTATO CASSEROLE.

It was FOR SURE a delicious event.

My belly was MUY happy that night :)



Although it was my first-ever attempt at set design, I actually had a lot of fun learning about it all and was relieved that the team seemed pleased with the results.

I plan to take a nice little break, though, before EVER doing that again, HA!


Sunday basically consisted of church, BBQ, church again, and Cracker Barrel breakfast for dinner with some new friends. It's amazing what a difference it makes that we're starting to make friends here.

Massive amounts of coffee and laughter were had that night.

We were really a delight to the staff, I'm sure.

We came home and I finished reading BooMama's newest book - which, by the way is even better than her first. Highly recommend this one, peeps...




...and tonight I cracked open this beauty, which I've heard RAVES about. I'm pretty pumped about this one.


A rainy night at its best.

I'll be the first to admit that this is NOT my most exciting post, so KUDOS if you are still reading this (!!!!!) -- there's just something about blogging on a rainy night that's just sooooo....nice :)

Lauren Graham will ALWAYS be Lorelai Gilmore

It's midnight, and I'm baking again.

But it's okay because GILMORE GIRLS IS ON TV TONIGHT!

Not Netflix (even though I hear it's wonderful) - because we are NOT that awesome (read: modern). It's SOMEHOW made its way to ABC Family!

I should stay up this late more often. Maybe I shouldn't, because I'm actually an old lady that can't function past 9 p.m. Plus there's that whole "real world job" thing that really comes in handy when you want to buy a house and puppy. Preferably not in that order but hey, TOOOO-mato, tahhhh-mato.

So back to the oven.

Did your parents ever pick on you while growing up about coming home and announcing that you suddenly have a science project due the next day?

I got that ALL THE TIME.

And tonight was payback for those "sudden" announcements as a child, I suppose.

While perusing The Pioneer Woman's cookbook for her AHHHH-mazing Corn Chowder recipe, Hubs reminded me that his work is having some kind of "food thing" tomorrow and that he was supposed to bring a dish.



I looked in the fridge, and we literally had fish and frozen vegetables.

We're trying to eat healthy again. And this doesn't work well for work functions, mind you.

And the RED VELVET OREOS that Hubs brought home yesterday? Well. They're MORE THAN HALFWAY gone and therefore unsuitable for said word function as well.



Oops.

So I started cooking and Hubs made a mad dash to the store to buy a few things for a little experiment we're concocting.

WHY I always gravitate toward a brand-spanking-new recipe for big events, I'll never know. Stay tuned for the results and maybe we'll get a post out of it.

NEWSFLASH. I've just realized that Paris was the Gilmore Girls' version of Sheldon Cooper. I can't be the only one thinking this. Moving on.

And OH MY WHAT the Mom from Happy Days is Granny Lorelai!

Oh Gilmore Girls. Where have you been the last few years? Lauren Graham is my spirit animal.

Coffee Buzz

I'm experiencing THE BEST kind of coffee buzz possible right now at this very moment. I'm productive, energetic, happy, excited, and focused --- for about 30 seconds at a time.

Oddly enough? I've gotten A LOT done.

I can't help it. My attention span is so crazy short right now that the 45ish seconds I've spent on this blog post (so far) is the longest I've focused on anything in the last hour or so. But 30 seconds here and 30 seconds there keep me focused and FOCUSED HARD on the task at hand, so it helps me get things done quickly and, somehow, efficiently.

I'm PRETTY SURE this is due to the fact that I drank about 3/4 of a cup this morning, as opposed to the usual 1/2 a cup my system can tolerate.

I have so much to share! So here is an abbreviated list of a few awesome things from the week.

More to come later!



HOME.
This weekend Hubs and I threw a few things in our bags and hit the road to visit my parents for a WHOLE, ENTIRE weekend. If you're a middle child like me you realize that this meant I had their complete attention for TWO FULL DAYS, and you also realize that this means it was basically Heaven.

Not to mention there was homemade apple pie involved. And that just takes everything else up a notch. Is there anything better than coming home to your childhood home and, upon getting hugs (and did I mention COMPLETE attention?) from your parents, the sweet aroma of your favorite pie is calling your name?

I didn't think so.

Not to mention there were sweet puppy kisses from this ball of cuteness.



PAUL'S PASTRY.
My hometown has the best food EVER. So serious. Fresh seafood delivered daily, an awesome mix of homestyle-Cajun cooking, and a fantastic (and cheap) Mexican restaurant that you have to visit at some point in your life. But best of all is our bakery. Paul's Pastry has been around for years and years. What started out as a little blue wooden building on the side of the highway has grown into a giant of a bakery that smells like the way I imagine Heaven will smell.

Basically every time we make a fly-by trip through my hometown, we HAVE to make a stop at Paul's. Everything in that place is as beautiful as it is delicious. Just look at those magnolia cupcakes. Icing for DAYS. And those are THE BEST sugar cookies on this earth. There's nothing like it at all.



ADVENTURES.
I have a beautiful, sweet, hilarious cousin who doubles as one of my best friends. We were born a mere six months apart, so we've had some wild and crazy, exaggerated-storytelling-inducing adventures together through the years. So it was nothing unusual when we spontaneously decided to hit up the Moon Pie parade this past weekend to kick off our Mardi Gras season.

Let me make it clear, though, that was a clean, family-friendly parade in a nearby community that favors Moon Pies over beads. It was only 15 minutes long, made up of some local bands and kids in costumes, but we had THE BEST time. Not to mention that within that 15-minute time frame, we racked up on nearly 80 pies.

My mom and Hubs came along, too! The laughter was unstoppable that night and my heart was so filled and happy!

Speaking of Mardi Gras --- King Cake Season has ARRIVED!
Paul's has THE BEST (have I mentioned this?) and we stocked up appropriately.



SKILLZ.
I took a cookie decorating class this week! For the first time, I was able to decorate (somewhat successfully) with royal icing and it was loads of fun! Royal icing is HARD, people. And I mean "hard" as in "difficult," because it's actually quite soupy. Regardless, stay tuned for more cookies because I am ALL ABOUT IT now.

If we're being honest here, though...there was one rather unfortunate-looking cookie that didn't quite make it into this picture and somehow ended up in my belly instead.

The Tacos that Changed My Life

This is a story about the most AHHH-mazing tacos I've ever shoved in my face.

This is ALSO a story that could be alternately titled, "The Shadiest Little Taco Stand EVER."

...but I didn't want this post to have a negative connotation.


But let's continue :)


A few weeks back, when Hubs and I were hanging out in Folly Beach, we scheduled a kayak trip around the marsh at sunset.




It was glorious. We listened to the oysters "pop", saw a couple of jellyfish (eeesh), and watched some dolphins start feeding just a few feet from us.




Our tour guide, Kate, was the best. She guided us on our first trip last year, and we couldn't help but request her again. She's a local so we knew we could count on her to give us some not-so-touristy tips for the area.

And oh, did she deliver. She was the one that suggested we hike to the Morris Island Lighthouse not far from where we were staying, and THEN gave us a heads-up on a little-known taco shack around the corner whose tacos {serious quote:} "CHANGED. MY. LIFE, DUDE!!!!"

Now, if you know Hubs and I, it really doesn't take much to convince us to try some kind of new food. We love to explore and try weird things and then gauge on a scale of 1 to 10 how sick we feel afterward.

I may be kidding on that last part.

We barely loaded our kayaks before Hubs looked at me and said, "We've GOT to try these tacos."

So off we went. The place was a few blocks off of the main strip, but still very much walking distance from our hotel. The lighting was not great (we passed it up at first), and it was right across the street from a very....questionable looking grocery-slash-convenience store.

In other words, it was one of the shadiest looking places I've ever seen.

At first.

The door was blocked by some junk old furniture, and the one window of the place was closed. There were lights on inside, but we didn't see any people. The small crowd (read: 8 people) on the patio (read: at the tiny bar) was the only indication that this place was, in fact, open.

Since I'm being honest, I must tell you that we actually walked away at this point. We were a little freaked out by the small gathering outside of the creepy grocery-slash-convenience store and the lack of lighting for the next walking mile or so that suddenly we weren't so hungry anymore.

But yet, we were. So very, very hungry. And if these tacos really changed our dear Kate's life ---- well then, we had no choice but to try it. For Kate's sake, of course ;)

So back we went. We approached the bar and chatted with the surfer guy that was working and found out there were three things on his menu: chicken tacos, pork tacos, and shark tacos.

Yep. SHARK tacos.

As in JAWS, if you weren't paying attention.

I went with two pork, Hubs opted for one of each.




As for drinks? Two options.

Beer, and water from "that jug in the back," as I lovingly deemed it.

It was QUITE entertaining. So here we are. hanging out with the 8 other customers, waiting for our tacos and jug water and wondering just what we were about to experience.

And let me tell you...Kate was right.




These really were the best tacos with which I have ever stuffed my pie hole.

EVER, people.

Apparently, surfer dude (who turns out, was/is the owner) marinates and cooks the meat alllll daaaay lonnng with all sorts of dreamy seasonings and APPLES. APPLES! It gives the meat a nice sweet flavor unlike any other I've had. We even had little apple slices on top!

I even tried the Mister's shark taco, and it was actually really good! Just like a regular white fish taco - only AWESOME.

This was NOT a fancy place - but we LOVED it, and we loved how NOT crowded it was. Fun fact: half of the people that were there were actually part of the band that started playing once we got our food. It turned out to be a great, laid back atmosphere (no crowds!) with excellent food that was perfect right after a two-hour kayaking trip.

I'm pretty sure these tacos really did change my life.

Looooooovvvvvvve.

With that said, if you ever find yourself in the Folly Beach area, go for a kayak tour of the marsh (ask for Kate!) and then hit up Chico Feo (pronounced: cheee - koh fayy-ohh). You won't regret it!




Unless you hit up that shady grocery-slash-convenience store across the road. Then I can't make any guarantees for your enjoyment.

Some Stuff for FRIDAY!

People! I'm back! Let's celebrate!

A few weeks ago, Hubs and I took a little trip to Charleston (read: Chahhhhhhlston), South Carolina for our first anniversary - and it was SUCH a glorious time!

We saw things like this:







And hiked to an old lighthouse!



And ran along the beach!



And then ate some awesome food!





Like that there BANANA BREAD FRENCH TOAST at The Lost Dog!!!!


Aaaaahh....I do love a good vacation.

Even though shortly after we came home I spent my days headbutting a CRAZY cold or whatnot for a couple of weeks.

I'm CONVINCED I sounded JUST LIKE Phoebe Buffay that time she got sick on Friends.





For awhile there, every post I attempted to write turned into an ode to Dayquil. Or Vicks Vapor Rub. Or whatever I happened to be taking at that time. And I just couldn't put my invisible Internet friends through that (as opposed to this winner of a post ;) ). I'm telling you - it was NOT a pretty time in my life.

But all is well! You know WHY, friends?

Because it's FALL, people. Cleary, unmistakably, unequivocally FALL in Mississippi!

The temperature at our workouts in the mornings (<--- YEP - still happenin'!) have been ranging in the low- to mid-40s (FORTIES!!!!!) and the mid- to high-SIXTIES in the evenings!!!!!

I. AM. LOVING. THIS.

All the fall lovers say HEYYYYYYYYYY!!!!


BUT! Let's move on and talk about SOME STUFF for Friday:


one. Little Big Town's new album Painkiller is official HERE. Can we say pumped? I'm THISCLOSE to getting it but I've been instructed NOT to buy anything until after my birthday next week. We'll see how this goes.


two. Did you SEE the new Avengers trailer? Did anyone else's heart COMPLETELY BREAK when they saw this???????




No, Marvel! Not Captain America! DO NOT TOUCH THE CAPTAIN!

I was slightly hyperventilating distraught and had to Google to find out JUST HOW MANY more movies Chris Evans has signed on for before I could breathe again.

three. I just typed "Chris Rogers" by mistake because we had to RE-WATCH "Captain America: The First Avenger" last night and IT'S STILL FRESH.


Side note: I don't know if I've mentioned it on here before, but I was a little late to the Marvel movies party, but I'm only SLIGHTLY hooked (thank you MARRIAGE). To be COMPLETELY honest, I'd never seen any of the movies (apart from the first and second Iron Man) until just a few months ago. 

Aaaaaaaaand then we knocked them out in about a week. But I doubt I'll read the comics. I'm not sure if I can go there.

HA!

four. We drank THIS while on vacation. Chocolate Chip Cookie Crumble Latte. What the WHAAAAAAT. I have dreams about this stuff.



five. I've forgotten number five. I think it's because I got all hot 'n' bothered watching the Avengers trailer again and now it's all I can think about. Not to mention THAT MUSIC.

Run for the Omelettes!

So I did something crazy last week. So crazy that I'm actually wondering WHAT could have POSSIBLY even began to tempt me into it, but not crazy enough that I'm regretting it...yet.

...although my quads and glutes may give you a COMPLETELY different impression.

...as well as the way I'm walking at the moment.

You might remember my mentioning a certain pulled muscle in my back early last week. Well, a few days later I somehow convinced myself it was COMPLETELY better and decided to sign up for a 12-week 5 a.m. fitness bootcamp that began on MONDAY. That's right. Labor Day.

For TWELVE WEEKS.

Brilliant, am I right?

We're three days in and I am FEELING IT.

In all honesty, though, being sore is a fantastic feeling. I've done this program twice before since moving here, and although it's no doubt one of the hardest things physically (and at times mentally) I've ever done, I KNOW it's worth it. It already is!


But let's back up a bit, shall we?


After my parents' visit on Friday, we suddenly remembered around, say, 11:30 or so that night that we were meeting our St. Jude Half Marathon team for a 6 a.m. run on Saturday. WHOOPS.

So, going on about 4-ish hours of sleep, we pushed ourselves through a very hilly, very HUMID morning run. We all struggled - and definitely had to walk a few times - but we felt so great afterwards!

...Plus we knew that The Broken Egg was waiting for us soon afterward!






Whoop whoop!

#RunForTheOmelettes!

I ate on the lighter side and chose a dish filled with fruit, quinoa, granola, toasted coconut, and a sweet cream drizzle. YUM.



However --- I was only slightly jealous of the Mister's choice, which was an omelette that had all sorts of wonder within: crab meat, crawfish, spice, and some kind of something that tasted even better than hollandaise sauce!




I may or may not have stolen politely requested a bite or two :)


I'm pretty much obsessed with loving this new tradition of ours.


By the end of the day, the hilly run started to kick in as our glutes and quads started getting sore - but it was NOTHING compared to what was waiting for us on Monday morning!


NOTHING!





Our alarms went off at 4:05 on Monday morning (Labor Day WHOOP!) and we were at our training by 4:45. The weigh-ins, push-ups, sprints, jumping jacks, and yelling started at exactly 5 a.m., when we were reminded that this was a completely no-nonsense training, and that we would be in the best shape yet if we cooperated, and there were no questions, no arguing, and no walking.


"RUN, don't walk!" they said.


Have I mentioned that our coach is a former SEC-standout -SLASH- NFL player?

That he's approximately the size of Goliath?

That his arms are bigger than my legs?

Or that his mere presence makes you tremble in your running shoes?


It's...a tad scary, I won't lie. But it is the biggest adrenaline rush and the hardest challenge that somehow winds up being pretty enjoyable.

Well, maybe afterward. But by 6 a.m., I'm a fantastically happy person!!!! 

But that very well could be the endorphins :)

Funny enough, I am still walking like an old lady. Thanks to our Labor Day shenanigans, I spent a nice chunk of the holiday (post-workout) recouping in our recliner with a book and a heating pad to mend my sore little back (thankfully, there's no serious pain, just soreness from the exercise :) ).

...because Tuesday was Leg Day at boot camp (YAY SQUATS!)

...and today was what I'll call HIIT day (YAY SPRINTS!).

So if you need me at any point over the next 12 (now almost 11!) weeks, I'll probably be curled up in the fetal position on a football field, covered in morning dew, sweat, and shreds of artificial grass...and being screamed at by a giant.

Gross is the new skinny.

P.S. Have you ever done a bear crawl? My hips hurt. And pretty much everything else does, too. Even my fingers.
