You Be Johnny & I'll Be June

I can't stop listening to Miranda Lambert's new album, "Platinum." I've basically had the whole thing on "Repeat" since Thursday.

It's just...so...good.

It's keeping me upbeat throughout this crazy weather and lack of sunshine.

You what else is good though?

A pasta dish that doesn't make you feel like you weigh 6,000 pounds WHILE it's busy being pretty delicious.

I made this weeks and weeks AND WEEKS ago, but just didn't get around to posting it. I found it in my phone today and thought HEY WHY NOT because wintery, rainy days just call for pasta sometimes AMIRIGHT?



I've only recently discovered egg noodles. WHY I've never cooked them, I'm not sure, but it probably has something to do with the fact that "egg" and "noodles" just don't sound appetizing AT ALL to me.

BUT --- one (very cold) night I just bit the bullet and tried them anyway because they are CHEAP and I didn't feel like eating frozen vegetables.

YES they are enriched and YES they are probably not the best for you --- but I figure a little enrichment can't be too terrible every now and then, right? Everything in moderation, I'd like to believe.

Have you ever had beef stroganoff? It's never really appealed to me, but I think I had it once in college and it wasn't too bad. This version is made with turkey though, as well as a few other seasonings, and it is SO MUCH BETTER. Just be sure to season it because you do NOT want this dish to be bland. And those mushrooms? They add SO MUCH. Please add mushrooms and you won't regret it :)



The SAUCE is the treat in this dish. It's easy and fast to throw together and really the need for those aforementioned enriched noodles is just a minimum. And THAT means we can feel a LEETLE better about eating said noodles and just enjoy the dish all around.

This all came together in about 30 minutes or less. Which COMPLETELY made up for the hour-long wait in traffic trip to the grocery store it took to make it happen.

Definitely something to consider for a rainy, chilly Monday. Happy Day, friends!


Turkey Stroganoff

((serves 2))


What you'll need:
1/2 lb of lean, ground turkey (I use 93/7)
1 small can of cream of mushroom soup
6-8 small mushrooms, rinsed and chopped
1/2 cup sour cream
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp extra virgin olive oil
dash of basil and oregano (or Italian seasoning)
salt and pepper, to taste
Tony's (or other cajun seasoning), to taste
1-1.5 cups of cooked egg noodles

What you'll do:
Saute' mushrooms in olive oil with garlic, onion, and Italian seasoning. Once mushrooms are fully cooked, remove and add turkey. Turn heat to medium, season with salt and pepper, and cook until completely done, about 10-15 minutes. Turn heat down to medium-low and stir in sour cream and cream of mushroom soup. If sauce is too thick, add a little water or chicken broth until it reaches your preferred consistency (I like mine slightly soupy). Season with Tony's or other seasoning to taste, then serve hot over warm egg noodles.

Sunday Shrimp & Grits

Is anybody else completely obsessed with "Uptown Funk"?

I can't help it. I'm hooked. It's basically been the thing that's getting me through this manic Monday!

But it's all good. Because you know what ELSE I'm currently hooked on?

Shrimp and grits.

Thaaaaaaat's right.

I'm cooking again!

Actually, I cook A LOT. I've just been really boring as of late.

So whether it's the 60+ -degree weather and sunshine we had this weekend, or just that I got tired of eating chicken, SOMETHING reallllly motivated me to get a little creative in the kitchen.

Okay let's face it - it was Pinterest.

I LOVE shrimp and grits. It's one of my favorite dishes to order when we go to legit seafood restaurants down on the Coast. Nobody does shrimp and grits like the South, people.

But I've never really attempted to make it myself. I've made a version or two with a few other fun ingredients added, but guess maybe I was just afraid it wouldn't be the same? Plus, when I want shrimp and grits, I REALLY WANT SHRIMP AND GRITS -- so to get all pumped about making it and eating it -- and then have it NOT turn out? Well, that's just heartbreaking.

But yesterday was different. Oh, so different. I'd found the recipe via Pinterest on Saturday night and it was all I could think about come Sunday morning. My tastebuds couldn't take it anymore, folks.

So, after church we threw some thinks in a skillet, cooked some grits, and hoped to goodness it would taste all right. And you know what?

It was a pretty fantastic recipe.

...although I'll spare you the horror of my photography skills, because it's really hard to make shrimp and grits look pretty with an iPhone camera and bad lighting ;)

You can find the original recipe here, courtesy of Southern Living Magazine (speak to my heart!), but I put my own spin on it below. It actually calls for very practical ingredients - I had basically everything on hand already except the shrimp.

Careful, though -- this dish is super filling! It's nice and cheesy and starchy and seafood-y all at once. And it's wonderful :)

Sunday Shrimp & Grits

Serves 4

What you'll need:

2 slices of turkey bacon
1 lb of medium-size shrimp (I used frozen, fully cooked, de-veined, tail-on shrimp)
1/4 cup flour (I used self-rising, and it worked fine)
1 cup mushrooms, sliced
2 tbsp extra virgin olive oil
1 cup low-sodium chicken broth (plus a little more, just in case)
garlic powder
pepper
salt
Tony's

Grits:
1 cup Quick Grits
1 can low-sodium chicken broth
1/2 cup milk
1/2 cup half-and-half
1/2 cup shredded, mixed blend cheese (I used the "Pizza Blend")
1/2 cup shredded mozzarella cheese
2-3 slices Provolone cheese.
dash of salt
dash of pepper
dash of Tony's

What you'll do:

In a large, non-stick skillet, heat about a half tablespoon of oil to medium heat. Cook the bacon until crisp, then set the strips aside (drain on a paper towel if needed, but turkey bacon typically isn't very greasy). Do not clean the skillet.

Saute the mushrooms in the bacon drippings (if any), adding about a teaspoon more oil if needed (you can also add just a small pat of butter here). Sprinkle with pepper and garlic powder to taste. Cook until tender.

If needed, clean/defrost/de-vein/de-tail shrimp, then season with salt, pepper, and Tony's to taste. Dredge in flour, then add to skillet to cook with mushrooms.

When shrimp begin to brown, add chicken broth and season to taste. Let this mixture cook for about 5 minutes, then turn heat to low. This should be very gravy-ish, but not too liquid-y. If it gets too dry, add a little more broth until it reaches the right consistency.

Serve piping hot on top of grits.

For the grits:
Combine broth, milk, and salt in a medium saucepan and bring to a boil over medium-high heat. Mix in the grits a little at a time, stirring with a whisk. Once everything is combined, turn heat to low and let this cook for about 10 minutes, stirring occasionally, or until thick.

When grits are fully cooked, add in the cheese and season slightly with Tony's as you stir.

Once everything is evenly combined, spoon grits into your bowl and top with mushroom and shrimp mixture. Crumble bacon on top and enjoy!

BENterest

Y'all.

My husband has discovered my Pinterest account.

Not in the sense that I was hiding it from him. I mean in the sense that he never really paid much attention to all of the hype about Pinterest - it was just a thing.
Until yesterday.

Boy oh boy --- what can of worms have we opened here?

After our workout yesterday morning, Hubs happened to pick up our iPad and - for some reason - was drawn to the little "P" that is the Pinterest app (like a fly to a zapper!!!!). I have no idea how this happened or what provoked this action, as I was a little busy trying to de-grass and de-stinkify myself from the morning. AKA ASTROTURF.

{One of these days I might muster up the courage to take a post-workout photo to illustrate just how hard core we look, what with our scratches and bruises and sore muscles covered in fake grass and sweat.}

But as I was slowly drifting off into a pre-work nap (<- YES), I was startled by these words coming out of his mouth:

"So I found this recipe on Pinterest...."

AWAKE.

What?

I'm not sure if I've ever heard a guy say that before. Not that guys can't enjoy Pinterest - I KNOW everyone can get hooked on enjoy Pinterest and there is likely something there for everyone. It just caught me WAY off guard that my husband - a huntin', fishin', social media hatin' country boy - even looked at Pinterest...even for a short amount of time!

But then again, he also loves food. And Pinterest is cluttered with pictures of food. And hence, recipes.

I was kinda busy yelling "WHAAAAATTTTTTT" to even hear what kind of recipe he found.

Sorry, honey. I couldn't hear you over my exasperation.

But then he repeated it, and then listed a few other recipes he found, and then I laughed.

After which I realized I would need to hit the grocery store at some point that day because we now had a new plan for supper that night. And a Pinterest board dedicated to Ben's favorite foods.

I have no idea how to feel about this.

Jesse & The Rippers & A New Recipe


It's been an interesting week. Tres intéressant. And I'm slightly exhausted.

I mean, caring for a Royal Baby can be exhausting.

From the labor, to the waiting...to the waiting...to the press announcement at the hospital, then the OFFICIAL placement on the golden easel, then the Town Crier.

Oh the Town Crier.





And then there was that moment on the steps, when they waved and chatted and laughed and looked fabulous. Then hopped in the car and drove away.

Whew. What a week.

;)

Anyway, aside from All Things Royal (which I love. So much. So very, very much), in all actuality it's been a bit of a tiring month week.

Is this real life? I need sleep.

However, I'm about to show you something that I'm pretty sure is going to make your day. It definitely made mine - and it's only 10am!

I'm talking about Jesse and the Rippers, everybody. JESSE AND THE STINKIN RIPPERS. On that show with that guy that used to be on that show that airs LIVE from New York every Saturday night.

Whaaaaat?

JESSE AND THE RIPPERS. Full House anyone?

Jesse and the Rippers recently reunited on Jimmy Fallon. Please watch this. It gives me almost as much joy as the Royal Baby.

I find it fascinating how John Stamos has never aged. He even got the perfect 90's hair back for the show. Then again, when was Uncle Jesse's hair NOT perfect?

And Aunt Becky? Loved her. Aunt Becky, Uncle Joey, DJ, and Gibbler FO EVA.

Foreverrrrrrrr....ForEVERRRRRRRRR.....

And Comet. We can't forget Comet. And Steve. Steve was always cool. To this day I STILL squeal when he's waiting at the door in a tux for DJ's prom even though Michelle has amnesia and DJ has no dress but somehow looks GORGEOUS as always and OH EM GEE I LOVE DJ on that last episode.

Oh childhood.


HEY LET'S TALK ABOUT FOOD

Last night was a late supper night and I needed something FAST and HEALTHY. Enter in THIS:





I don't know what it's called, but I call it Delicious.

Kind of like a vegetable-filled seafood jambalaya.

I came upon this recipe via Chocolate Broccoli. Please check out her site, it's adorable.

I had a lot of this stuff on hand already, and if I didn't it was something I would normally buy at the store.

Frozen veggies, frozen shrimp, Uncle Ben's 90-second brown rice? Helloooooo healthy one-dish meal.

The great thing about this meal is that everything is already cooked when you put it into the skillet. Just heat and season and You. Are. Done. Boom.

I used the Broccoli Stir Fry frozen mix for veggies, frozen shrimp already cooked, and Uncle Ben's brown rice. This might have taken me 15 minutes, tops. Maybe.

Then I made biscuits from scratch and all was well with the world.

I hope you make this dish. And I hope you eat it while listening to Jesse and the Rippers.



Cajun Shrimp and Rice

Adapted from the blog Chocolate Broccoli
Makes 4-6 servings

1 pouch of Uncle Ben's 90-second whole-grain brown rice
Zero fat cooking spray
1 pound peeled and deveined (and cooked, if you can find it) shrimp
1 tbsp of Tony's  (or other Cajun seasoning)
1 tbsp extra virgin olive oil
Sprinkle of garlic powder
Sprinkle of onion powder
1 package of frozen broccoli stir fry veggies, thawed
1/2 tbsp of Italian seasoning (I use Chef Paul's, but a nice mix of oregano and basil would still work)
1/2 tsp of paprika
1 can no-salt added stewed tomatoes
sprinkle of red pepper flakes
dash of cayenne pepper
sprinkle of salt
dash of pepper

Spray a bit of cooking spray on a skillet over medium-high heat. Throw in your shrimp and sprinkle with Tony's, toss to coat evenly. Saute shrimp for roughly 4 minutes or until done. Remove from skillet, but keep warm.

In the same skillet, heat your olive oil over medium-high heat. Add the onion and garlic powder first, then throw in your veggies, paprika, Italian seasoning, red pepper flakes, and cayenne pepper. Let it simmer for a few minutes.

Meanwhile, heat your rice, then add to the skillet once it's done. Stir in shrimp, tomatoes, salt, and pepper and cook/stir until everything is evenly combined and thoroughly heated.

Serve warm with homemade biscuit or french bread.

A Real Deal Kind of Meal

Let's face it. If you're in your twenties, you're on the go and on the cheap.

If you're in your twenties and you're planning a wedding, you're on the go, on the cheap, and have VERY little time to plan meals.

During the week, I typically get home around 8pm. I've had to work late a good bit as of lately, then hit the gym right after. Supper usually consists of what is in my fridge at the time and what can be defrosted the fastest :) I'll be honest, for someone who LOVES to cook, it's taken some adjusting to be able to throw together a fast (and healthy) supper so I can eat before 10:30 at night. However, it's really been great for my creativity - sometimes everything tastes great, other times I'll find out a recipe needs a tad more tweaking, haha.

Friday night was no such night, however. Knowing we were going out of town on Saturday for my friend's wedding, I'd looked forward to being able to cook a REAL meal all week. Because I worked late on Thursday night, I was able to leave work a tad early on Friday and prep everything before going to the gym. #SilverLining  :o)

This recipe is, yes, another recipe found via Pinterest. I don't have a lot of time to play around on Pinterest, but when I have a few minutes I go straight for the food. I call this the "Real Deal Kind of Meal," because it's the first "real" meal I've been able to cook in a long time. "Real" as in, the kind of stuff you get from your momma's kitchen - rather than quick one-dish suppers that are barely done by 8:45 at night! Ha!

Pardon me while I flash the photos of this meal - I'm still so excited about how well it turned out!



This dish was, surprisingly, very easy and very quick to make. The longest part is waiting for the chicken to bake, which is in total around 25 minutes. However, it gives you time to prep everything else and have it ready to eat as soon as your chicken comes out of the oven.



Baked chicken smothered with spinach and mushrooms - with sides of mashed potatoes and fresh green beans. Hungry yet? I know I'd like more :) It was light on the calories too. Waistline friendly, ladies (and gents, too)! 

Oh yeah, we made dessert too -- but that's another recipe for another time ;)

Smothered Chicken with Spinach and Mushrooms



For creamed spinach:
1/2 of a large bag of spinach leaves (I used frozen spinach, worked great!)
2 ounces of cream cheese
Shredded parmesan cheese, to taste
2 tbsp of olive oil
Garlic powder, to taste
Salt and pepper, to taste


For sauteed mushrooms*:
8 ounce package of sliced mushrooms
1/2 stick butter
2 tbsp olive oil
garlic powder, to taste
salt and pepper, to taste
italian seasoning
a dash of Tony's
*I cut this recipe slightly since there were just two of us


For chicken:
2 chicken breasts
shredded mozzerella cheese
garlic powder, to taste
seasoned salt (Mrs. Dash, Tony's, etc. I used both!)
Italian seasoning
a dash of oregano
pepper, to taste


Directions:

Heat oven to 350. Sprinkle the garlic powder, seasonings, and pepper on both sides of each chicken breast. Bake for 16 minutes.

Meanwhile, make the creamed spinach. Heat olive oil in a skillet, then add spinach and garlic. When completely cooked, add the cream cheese and parmesan cheese and stir until it's melted and combined. Remove from heat.

Start on your mushrooms: Melt butter and olive oil in a skillet. Add in the mushrooms and cook until they are completely browned. Once cooked, season with all of the goods :) I added just a splash of water to sort of deglaze it at this point, but this is totally optional. Cook until the water is absorbed and remove from heat.

Back to your chicken! Take your chickens out and flip them over. Place the spinach and mushrooms on top of each chicken, then add the cheese. Cook for another 12-15 minutes or until you see that the cheese is very melted and gooey :) Test your chicken to ensure that it is cooked through and remove from the oven.

Serve with veggies of your choice and impress your friends with your fabulous cooking skills! =)


P.S. Fun fact: Spinach is great for your skin, being fantastic for preventing acne, wrinkles and keratinization. It also helps with brain function and protects us against aging. Guess Popeye was onto something, huh?

The Results are In: Paleo Lasagna

And Helloooooo again Friday!

Last night's experimental supper turned out to be quite tasty. It was my first time trying a "Paleo" recipe, but it honestly was not all that different from the recipes I usually make. Around the time I moved here to the City, I began cutting out dairy for health reasons and, over time, decreased my bread intake.

Don't get me wrong, I still put cream in my coffee and enjoy a nice pasta dish every once in awhile. And let's face it, sometimes a girl just needs a cookie. Or a brownie. Or cake, but we've addressed that already :) However, I still do what I can to eat natural foods and incorporate vegetables as much as possible, which is why this recipe appealed to me.

Someone told me once: "If God didn't make it, you don't eat it." I guess you can say that it kind of stuck ;)

I found this recipe (and its many variations) on Pinterest. If your not familiar with The Paleo Diet, in short, it's a way of eating void of dairy, refined sugars, cereal grains, legumes and processed food. While I'm not a fan of what many call "Fad Diets," this seems more like a lifestyle change rather than a temporary diet. I'm not against it, but the concept is intriguing. I can only speak for myself, but it definitely feels better when I'm eating fresh veggies and lean meats.

Then again, I also feel good after a cupcake. All in moderation I suppose! ;)

This recipe is for Paleo Lasagna, aka no pasta noodles! But don't let that deter you from trying this. Like I said, I do enjoy a nice hot dish of pasta every now and then, but I do have to watch the portions or else I'll walk away feeling heavy and searching for stretchy pants. This dish is a lighter variation, and I can honestly say that not only was it delicious, it did not weigh me down and I actually had a second portion without guilt.

And if you think about it, no pasta = no carbs. :) If you're into that sort of thing.



Instead of pasta, this dish uses vegetables to separate the layers: in this case, zucchini and yellow squash. There's also broccoli mixed in with the filling, and I would suggest adding spinach if you're a fan. It also calls for raw goat cheese - which technically is considered a dairy product but is easier for our bodies to digest. If you're like me and curious, you can read about it here.

I've got another experiment up my sleeve for tonight's supper, so here's to hoping for more great results.  Until then I'll be busy at work and then heading to the gym for a nice boot camp workout before road trippin' tomorrow! Looking forward to the next couple of days - hope you are too!

Paleo Lasagna

from Tastebook

1 white onion, diced
1 lb extra lean turkey (I used less because that's what I had on hand)
1 15oz can diced tomatoes, low sodium
3 tbsp tomato paste
3 tbsp Italian spice blend
1 tsp salt
1/2 tsp pepper
2 cloves garlic, crushed
1 lb zucchini and/or yellow squash, cut into medallion rounds
1/2 raw goat cheese (again, I used less because of what I had on hand)
2 cups Greek yogurt
1 head broccoli, roughly chopped
1 egg

In a skillet, heat 1 tbsp of olive oil and add onions. Saute' on medium-high until softened. Add ground turkey, canned tomato and paste, spices, salt pepper, and garlic. Cook until turkey is completely cooked. Set aside.

In a bowl, mix goat cheese, yogurt, broccoli, and egg. Mix until it's nice and combined.

Lightly grease the bottom of a baking dish. The remaining veggies will act as your "pasta" to separate the layers. Place a layer of zucchini and squash rounds around the bottom of the dish, then add a layer of the turkey-tomato mixture. Top with the broccoli-yogurt mixture and repeat until you have no more left!

Bake for 45-60 minutes, then let it cool for about 10 minutes before serving. Unless you're like me and you're just hungry. Then I would suggest be careful not to burn your tongue :)

Party Planning 101: Part One

Hello my name is Lisa, and I have a crush on Pinterest.

A little late to the game, yes. But I've been so hooked on it lately for all things party-planning. Technically, I'm not throwing a New Year's Eve bash this year, but as I said in my last post I have such a fun time planning parties and events and such. NYE always seems like the perfect time to throw a fun party with family and friends, or even to schedule a nice reunion with old friends from back home.

As fun as a party sounds, I think the plan for this year is simple: a calm evening at home involving a bonfire and fireworks with family, The Boy, and nice cup of homemade hot chocolate (recipe will come in 2013! YAY!).



However, for those of you spontaneous folks who DO want throw a party this NYE - or any party at any other time in the future - here are a few party-planning tips I've learned through the years.

Theme.
Once you've made your guest list, pick a fun theme to incorporate throughout the party. You can work this into the decorations, the food, the attire, whatever you choose. If you're a planner and make preperations in advance, invitations are always a great idea to give your guests a heads-up of the theme and dress of the event (formal, casual, etc.). You won't necessarily have to state the theme on your invite, but I've found it fun to apply your theme to the design.

If you're buying rather than designing invites, there are some great designs out there that will likely give you some inspiration. Remember, this is YOUR party, make it personal and put your own spin on it!

If you're spontaneous, though, a simple phone call will work just fine!

A theme can be anything from period costumes (Downton Abbey, anyone?), a "Who Dunnit?" mystery theme, or something as simple as "Happy New Year!" and "Silver and White," making your color scheme very easy.

Don't fret if you're lacking in the theme department, though. A few years ago I hosted a NYE/reunion party for my old friends from high school. Basically, the day before, my mom and I raided a party store and found all sorts of tinsel, banners, even a NYE ball to drop on the cheap and just had fun with it! Our Christmas decorations were still up, so it was already a festive atmosphere. Trust me, your theme (or lack thereof) will NOT make or break your party. I'm a party-planning nerd, so I get into these things!

Decorations.
Oh, these are FUN. Decorations can be anything from extravagant to simple and still work with your theme. Bonus: They don't have to empty your wallet to look fun and fancy!

I've found that various party supply stores will have all you need and more, and if you catch them at the right time they can actually be pretty affordable. (HINT: Buy next year's NYE Party decor as soon as 2013 hits the calendar, ha! Clearance sales rock.) However, basic party supplies and DIY projects can go a long way.

  • Check out that first beauty. What is it about an outdoor setting at night with candles? It's just radiant and can really set the mood for a get-together, no matter the size. This setting wouldn't be terribly expensive, depending on how many candles and the types that you want to use. Wal-Mart sells them in packs of 50, and even Sam's sells these in bulk - both at very reasonable prices. If you don't have votives, try out clear jars (like empty baby food jars, without the label), or use candles of different sizes in various-sized jars. Don't be afraid to experiment!
  • The second picture is a great example of the "Silver and White" theme I mentioned earlier. Simple touches like white and silver balloons with curled string can add a fun effect. Bonus points for clear balloons with confetti in them - festive, yes?!
  • Mason jars. Aaaah, the mason jars. If you grew up in the South, you grew up using a mason jar in some fashion. For me, my grandmother met us at the door with one of these guys filled with ice and cold Coca-Cola. If you're weaving gold into your theme/color scheme, this would be fun touch, whether for your drinks or just decoration. You could use them as holders for straws, forks, party horns, etc.

    I'm not a huge fan of the completely painted look in this picture, so for my imaginary party I would most likely leave the jar clear and tie a wide glittery or festive ribbon around the center, or cover the lid in either paint or glitter that matched my color scheme. (I'm a bit of a fan of glitter ;) )
  • Oh, these votives. I heart these little lovelies. There's a short description of how to create these on Pinterest, but I found this tutorial to be really helpful. A seemingly small addition to your decor that will have a great effect. (P.S. I REALLY like glitter! :) )
